Cranberry sauce muffins

These are delicious. I got part of the recipe from the internet and altered it. I can't remember what that's called...recipe make over? Anyway these are great and it's an awesome idea for leftover cranberry sauce!

Ingredients

  • 1 1/2 cups white whole wheat flour (or 1 cup of the flour plus 1/2 cup ground flax seed)
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 ½ cups of leftover cranberry sauce
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • grated orange rind to taste

Directions

  1. Heat oven to 400°F. Line muffin tin with paper baking cups or coat with cooking spray.

  2. In a large bowl, combine flour and flax, oats, brown sugar, baking powder, cinnamon, baking soda and salt; mix well. In medium bowl, combine milk, oil, cranberry sauce, egg, and orange rind; blend well. Fold into dry ingredients all at once; stir until dry ingredients are moistened.

  3. Fill muffin cups about three-quarters full.

  4. Bake 20 to 22 minutes or until golden brown.
